Ful Medames (Fava Bean Stew) - Egypt
This is our first breakfast recipe for a good and energetic start in the day.

2 cups dried fava beans1 onion, finely chopped
4 cloves of garlic, minced
1 teaspoon cumin powder
Salt, to taste
Olive oil, for frying
Lemon wedges, for serving
Chopped parsley, for garnish
Recipe
Soak the dried fava beans overnight in water.
Drain the soaked beans and rinse them well.
In
a large pot, add the fava beans and cover them with water. Bring to a
boil and then reduce the heat to a simmer. Cook for about 1-2 hours or
until the beans are tender.
In a separate pan, heat some olive oil and sauté the chopped onion until it becomes translucent.
Add the minced garlic and cumin powder to the pan and cook for another minute.
Drain
the cooked fava beans and add them to the pan with the onion and garlic
mixture. Mash the beans slightly with a fork or a potato masher.
Season with salt to taste and cook for a few more minutes to allow the flavors to meld together.
Serve the Egyptian Fool hot, garnished with chopped parsley and accompanied by lemon wedges.
